Muesli every day for lunch for at least the last decade.
Love it, never tire of it.
Aldi/Lidi/Asda fruit muesli (anything with less than 3.5% fat).
Don't touch the high nut content luxury brands they are 10/15 % fat.
Stick 250 grams in a bowl, add 500 ml apple juice, microwave half power for 5 minutes.
Warms it a bit without cooking it.
Fabtastic lunch.
For camping, heat apple juice and pour on, allow to stand for 5 minutes.
Same result, no microwave.

If I'm packing up to go I have a coffee and a smoke then I'm away. If I'm staying where I am at somewhere like a rally then I'll have a boil in the bag meal and use the water to make my coffee. Obviously I'll be having that all important smoke while the water boils.
I try to avoid any form of cooking that will require washing up when I'm camping because it just seems like a waste of time that could be better spent doing something I'd enjoy.

Re washing-up, take some kitchen towel with you. Wipe pot(s) out as soon as you have used it/them, then later put a little water and detergent in a pan, warm over stove and wash pan(s) with a small scotchbrite sponge transferring water to other pans/mugs as necessary. This works remarkably well, the key is to wipe out pans as soon as you have finished using them. I use the better quality kitchen towel which can also be used as a snot rag and for cleaning bike etc.
