I think Pat sums it up pretty well but a lot depends on where you're going. Spain is a very diverse place with climate variations to match.

The north coast has a climate pretty much varying from Cornwall to the west coast of Ireland, for instance, and in Galicia it can be really chilly even at low altitudes as there's no Gulf Stream effect on the coast there.

It can be very cold at night in many of the mountain regions, i.e. the Pyrenees, Corillera Cantabrica and much of the interior over about 1,000 metres, so you'll want something at least a bit warm when you're lurking in your camp site in the evening.

Tramp mentioned the rainfall - the Mediterranean coastal mountains are notorious for sudden, short but torrentian rainfall during the summer. So you'd be well advised to have waterproofs but it's often better just to sit out the worst squalls, especially in poor visibilty!

It's also a good idea to be able to do a quick strip/change when you arrive at a camp site. I keep the essentials in a tank bag so I don't have to unpack as such until I'm well settled in - I also have swimming trunks always to hand in case I find a nice cool stream!

Enjoy

I'd shelve the leathers for over here you'll cook !!! been there done that !!!
I bought me and our lass a summer jacket a piece over here €80 each basically its a cordura mesh jacket with amour and fantastic but have to admit i only wear combats on the pins !!! i know i'm a silly boy but i still wear boots, i just carry a set of water proofs for Decathlon , the type that hill walkers use €12 a set , keep out the wind and rain and roll up to nothing. If you get down our way mate call in Phil
When I rode to Spain, on the way I started of with Cordura gear (Frank Thomas) but had taken out the Trouser liners, left the jacket liner in by the time I got to Spain, the Jacket Liner was out & in a bag. by the tine I had got to Spain spent a few days with my freinds visiting places like the Al Alhambra, I was just wearing my jacket & T shirt & combat trousers I forgot to hand back from Gulf 1  & my Riding boots.
as everyone else had said, it is ok if riding it is the stopping, then you get the wafts of heat, I stayed at Estapona a short way from Malaga & Gib either side. I tryed the kelvlar jeans (my mates) but found them quite warm even on the bike!

When it's really hot I just use a moto x style body armour over a wickie base layer and a sweat shirt over the top. Very cool and comfy.

Bought 'Air' system suit from HG for trip down to Sicily. Plenty of mesh and zippable vents. Temps up to 40. Even with this lightweight gear on you didn't want to be stopped in traffic for very long.

Old tw@t looking like a gay tea cup, but sporting a Knox Cross shirt.

Knox Cross Shirt

It worked very well except for the basic T shirt which should have been a long sleeved wicking layer. I ended up with sunburn in the crease of my elbows !

I wore this all the time and used my normal jacket with the armour removed over the top when needed. Photo taken at the HUMM, July 2011, central Pyrenees.

Personally the only thing I have against kevlar kevlar kecks is in areas of high humidity the outer cloth absorbs sweat and weighs a ton. Better off looking for open weave codura pants with body armour if you are in an area with high temps and humidity like on the French side of the pyrenees Atlantic

Absolutely crucial are base layers, not only do they wick away moisture but also separate your gear from you so you don't sweat as much.

Must admit I wore my 2 piece a* leathers in France in September and apart from getting stuck in roadworks in Dijon in 30+ degrees, I found them ok, I sweat more in my textiles tbh.
