OK, so a question for the old school engineers on here. Can a CNC milling machine not exactly replicate the precision being achieved by this guy? Is that not why his craft is dying out?

A CNC lathe can achieve such tolerances (as long as the tool settings are accurate) but for a 1 off it's a lot of work with probably very little time saving over doing it manually.
If doing a batch you would probably generate the machining program from a 3D model using software but set the tools to leave a tiny bit of material on, that way you can measure the 1st off component and adjust the tool settings (using the machines control panel) until you get it spot on, then you can run a batch off. If you don't have the correct software you can manually write a program using 'G code' and again adjust the tooling on the 1st off before running off a batch.
