Yeah I've ridden 2 up all over the place and never had an issue, inclines, declines, loose gravel and mud. I suppose it's about communication.

Side stand down
Front brake on
Feet solid and flat
Elbows out
Nod to pillion to let them know you're ready
Pillion grips shoulder
Pillion outside foot to rear peg
Up and over
Tap on the rider's shoulder to let them know you're good to go
Mirror
Signal
Life saver
Off you go - as basic.

Just don't rush it. :)

Ask the pillion to get on the bike using the front seat then slide backwards. Rider may then need to hop on sideways but makes it easy when luggage is attached :)

Just a note to say that most bike side stand are not designed to take more weight than the bike. ;)

As said already me an the missus have travelled 2 up with luggage and camping gear. The first time we went after many years without the bike we loaded it up and practiced for an afternoon until we were both happy with the technique.
Feet spread standing up, lean forward slightly, front brake on. Wife puts left leg on foot peg stands up straight before moving her right leg between me and topbox. second nature for us now and never an issue.
