I always take all the luggage off and chain to something tough.

Like others have said whenever I've stayed in a hotel they have always found a place to hide it for me.
And now, Harry, let us step out into the night and pursue that flighty temptress, adventure.

We usually camp and never use any security for this.
When we do stay in buildings we chain the bikes together.
If we want to stop somewhere when the bikes are loaded (walk round a tourist attraction, go for a swim etc) we will either park the bikes in view or park them in a busy area.
If it’s a short errand one of us will stay with the bikes.

Having said that the gear we have loaded on the back is camping gear - not a prize target for thieves. Come to think of it nor is a few scruffy clothes and cooking gear which is in the panniers.

In 27 years of touring Europe including the Balkans and Morocco, we’ve never had anything nicked.
