Sure it was.
The roads were not random.
One guy had spent an enormous time to search google earth for possible routes.
We were three persons that helped him test ride different alternatives for many parts of the route.
Until we finally had a complete route. Tested and with GPS logs.
The ride ride went smooth.
It took almost 7 hours. Including a "lunch in woods" and a coffee break at a cafe.
It was a big success.
=
Tour organizer on Honda NC 750 with street tires.
Yamaha 900 also with street tires.
And a couple of riders that had not left the tarmac before.
So they stretched their comfort zone a lot. With good support.
But they all made the complete trip.

I have taken my 84 K100RT on roads like that in France, on street tyres.

You get some lovely routes. I have never owned an off road bike and to be honest have never even sat on a BMW boxer of any kind. In fact the first time I ever sat on ANY BMW bike was one day in 2010 I was persuaded to take an elderly 1992 K100LT ex police bike for a test ride as it was for sale. I bought it and quite a few more K bikes since.

I got my first Provisional Licence on 17th October 1972 and took a lot of road bikes into strange places over time.

I suppose I am saying don't be afraid to take a road bike on these routes. Just learn the bikes characteristics, know the bike's and your own limitations and ride accordingly. it can be real fun.
1992 K100LT June 2010 110,000 miles
1984 K100RT July 2013 36,000 miles, 90,000
1983 K100RS Nov 2018 29,000 miles, 36,400 miles
1996 K1100LT Oct 2020 37,990 miles
1984 K100 Sprint March 2023 58,000 miles

How did you get the bikes to Portugal, did you ride or transport?
