Try Helen Lloyd's book, Iceland, Serrow Saga. She spent a few weeks there and there's a fair bit of detail about the routes she rode. A good read too.
Just along for the ride.
Husqvarna 901 Norden. Husqvarna 701 Enduro. Moto Guzzi LeMans II.

Helen also has a youtube channel and I'll second the book as a good read.

Wikiloc is also a good resource.

Driving/ riding in Iceland, OFFROAD is strictly ILLEGAL.
All riding should be done on the marked roads, the beauty of Iceland being that mostly only around the bigger towns
and part of ring road 1 have asphalt. Yes the police have Icelandic style 4x4s and do drive around the interior.
The 931 and 910 is a good start to get you into the interior. River crossings best planned for the morning and take care!
F35 is also a good one to try. Have a good trip :D
