Compressors take a lot of power ... probably best run direct from the battery. (I'm no fan of cig-lighter sockets - they seems to disconnect/fall out if you so much as look at them!). How old is your bike? If it has a CANBUS system, I don't know anything about them so this might not work. Wine bottles fit nicely in motorcycle boots, and boots tend to be more stable. If you are on really rough ground, tie two boots together with a bungee or luggage strap, then put your wine in one of them.
